These Crispy Chicken Ranch Potato Boats are crispy, cheesy, and packed with flavor. Golden baked potato shells are filled with a creamy ranch chicken mixture, topped with melted cheddar and mozzarella, crumbled bacon, and fresh green onions, then finished with a drizzle of ranch dressing. Crunchy, creamy, and smoky — all in one bite.
They are perfect for dinner or parties, because one tray makes 8 generous boats, they hold up well on a buffet table, and everyone loves a loaded potato.
Why You’ll Love This Recipe:
- Crispy potato shells with a creamy ranch chicken filling
- Melted cheese, smoky bacon, and fresh green onions on top
- Perfect for dinner or parties, and easy to scale up
- Simple ingredients and mostly hands-off baking time
Instructions:
- Bake the potatoes: scrub 4 large russet potatoes, prick with a fork, and bake at 400°F (200°C) for 50 to 60 minutes, until soft all the way through. Cool slightly, cut each potato in half lengthwise, and scoop out some of the insides, leaving a sturdy shell.
- Season the chicken: cook the diced or shredded chicken with garlic powder, onion powder, paprika, salt, and black pepper until heated through and well seasoned.
- Make it creamy: mix the chicken with cream cheese, sour cream, and ranch dressing until creamy and well combined.
- Fill the boats: spoon the chicken mixture into the potato boats and top with cheddar and mozzarella cheese, half of the crumbled bacon, and the optional breadcrumbs for extra crunch.
- Bake again at 400°F (200°C) for 10 to 15 minutes, until the cheese is melted and bubbly.
- Drizzle with ranch dressing, sprinkle with the remaining bacon and chopped green onions, and enjoy!
Tips & Variations:
- Do not scoop the potatoes too thin, or the boats will collapse — leave about 1/4 inch of potato around the shell
- Save the scooped potato for mashed potatoes or potato soup
- For extra crunch, toast the breadcrumbs in a dry pan before sprinkling them on top
- Add diced jalapeños or a pinch of chili flakes for a spicier version
Storage:
Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven at 375°F (190°C) until hot and crisp again.
